Delicious Vegan Blondies

Fancy some brownies but prefer something a bit lighter? Here's a delicious recipe for some blondies that will hit the spot. These vegan blondies are made with a mix of gluten-free and oat flour, providing a unique texture and flavour that's both rich and satisfying.

Ingredients:

  • ½ cup GF plain flour (65g)
  • ½ cup oat flour (90g)
  • ¾ cup demerara sugar (175g)
  • ½ tsp baking powder
  • ½ tsp salt
  • 40g Cox&Co chocolate, broken up
  • 4 heaped tbsp vegan butter (80g)
  • ⅗ cup peanut butter (170g)
  • 2 tbsp oat milk (60ml)
  • 35g Cox&Co chocolate for the topping

Instructions:

  1. Preheat your oven to 180ºC (350ºF).
  2. Combine the dry ingredients: In a large mixing bowl, combine the gluten-free plain flour, oat flour, demerara sugar, baking powder, and salt.
  3. Prepare the wet ingredients: Add the peanut butter, oat milk, and vegan butter to a bowl and heat until you achieve a runny consistency. Whisk together thoroughly, then add the 40g of broken-up Cox&Co chocolate chunks.
  4. Mix wet and dry ingredients: Pour the wet mixture into the bowl with the dry ingredients and mix until well combined.
  5. Prepare for baking: Spoon the batter into a lined brownie tin. Sprinkle the remaining 35g of Cox&Co chocolate chunks on top, pressing them slightly into the surface.
  6. Bake: Bake in the preheated oven for 22 minutes. Don’t worry if the centre is still gooey; it will firm up as it cools.
  7. Cool and enjoy: Place the blondies onto a baking tray and let them cool for at least 10 minutes before cutting them into squares. This step is crucial for achieving the perfect texture.
