Ingredients:
- 1 cup plain flour
- ½ cup brown sugar
- 1 ½ tsp baking powder
- ½ tsp baking soda
- Pinch of salt
- 1 tsp vanilla extract
- ¾ cup oat milk
- 2 overripe bananas
- Cox&Co dark chocolate cacao nibs (2 chunks/shards for each muffin)
Method:
- Preheat oven to 180ºC (fan oven).
- Combine dry ingredients in a bowl.
- Mash bananas with vanilla and oat milk, then mix into dry ingredients.
- Pour batter into a greased muffin tin, and add chocolate cacao nibs in the centre.
- Bake for 25 minutes until golden and cooked through.
Chocolate Frosting:
- 45g Cox&Co cacao nib chocolate (melted)
- 180g icing sugar
- 75g plant-based margarine
- 1 tsp oat milk
- 1 tsp vanilla extract
- Melt chocolate, beat margarine and icing sugar until smooth.
- Mix in vanilla, fold in melted chocolate and oat milk until smooth.
- Spread or pipe frosting over cooled muffins, garnish with grated chocolate.
