Banana & Cacao Nibs Muffins with Chocolate Frosting

Enjoy the perfect blend of bananas and rich dark chocolate in every bite of these Banana and cacao Nib Muffins. This recipe makes 6 moist and flavourful muffins topped with decadent chocolate frosting. They're ideal for breakfast or a delightful snack!

Ingredients:

  • 1 cup plain flour
  • ½ cup brown sugar
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • Pinch of salt
  • 1 tsp vanilla extract
  • ¾ cup oat milk
  • 2 overripe bananas
  • Cox&Co dark chocolate cacao nibs (2 chunks/shards for each muffin)

Method:

  1. Preheat oven to 180ºC (fan oven).
  2. Combine dry ingredients in a bowl.
  3. Mash bananas with vanilla and oat milk, then mix into dry ingredients.
  4. Pour batter into a greased muffin tin, and add chocolate cacao nibs in the centre.
  5. Bake for 25 minutes until golden and cooked through.

Chocolate Frosting:

  • 45g Cox&Co cacao nib chocolate (melted)
  • 180g icing sugar
  • 75g plant-based margarine
  • 1 tsp oat milk
  • 1 tsp vanilla extract
  1. Melt chocolate, beat margarine and icing sugar until smooth.
  2. Mix in vanilla, fold in melted chocolate and oat milk until smooth.
  3. Spread or pipe frosting over cooled muffins, garnish with grated chocolate.
