Ingredients:

  • 70g (full bar) of Cox&Co Bee Pollen Chocolate, chopped into chunks
  • 230g plain flour (can be substituted with GF flour if needed)
  • 200g plant-based butter (dairy butter also works)
  • 180g sugar (we used 90g golden caster and 90g soft light brown sugar)
  • 1 tsp vanilla extract
  • 1⁄2 tsp sea salt
  • 1⁄2 tsp baking powder
  • 1⁄2 tsp baking soda

Method:

  1. Prepare the Butter Mixture: Beat the sugar and vanilla extract into the butter until smooth. This forms the creamy base of your cookie dough.
  2. Combine Dry Ingredients: Mix all the dry ingredients in a separate bowl. Sift these dry ingredients into the butter mixture, stirring until they are fully incorporated to form a cookie dough.
  3. Add Chocolate Chunks: Gently fold the chopped Cox&Co Bee Pollen Chocolate chunks. Ensure the chocolate is evenly distributed throughout the dough.
  4. Refrigerate the Dough: Cover the dough and refrigerate for at least 1 hour. This step is crucial as it allows the flavours to meld and the dough to firm up.
  5. Bake the Cookies: When ready to bake, preheat your oven to 170°C. Scoop the dough onto a baking sheet, spacing the cookies evenly. Bake for 12 minutes or until the edges are lightly golden.
